Bake in a pre-heated oven. Higher temps will crispify (that's my made-up word for today) the outside of the potatoes. I had mine in the oven yesterday at 350 for about 40 minutes, and then boosted the temperature to 450 for about 15 minutes, but I like them really crisp.
(I forgot to take a picture until we had devoured most of the potatoes.) Yesterday, we ate them with baked pork chops, applesauce, steamed broccoli, and a green salad.

Man, I'm loving this new blog!! The pitas and hummus look delicious on the previous post, and your pictures of the roasted potatoes made my mouth water, especially when I thought of pairing them with pork chops and applesauce!! In fact, I bought some pork chops so I can do just that ;)
