Coconut banana bread with lime glaze
My husband's drug of choice is a banana. Growing up, if he ever came home from school feeling a little down or tired, his mom would say, "Have a banana - you'll feel better!" When we were first married, we used to joke that for him, even if the fridge was full, if there were no bananas, "There's no food in the house!"
Bananas are one of my favorite foods, too. I love them in smoothies or sliced onto toasted whole wheat bread smeared with chunky peanut butter. Bananas come in all-natural packaging that can go into your compost bin. They're easy to grab and stuff in a diaper bag or purse as you head out the door. They even have songs written about them.
Bananas rarely make it to the overripe stage at my house, but when they do, we love to make banana bread. We really liked this recipe for Coconut Banana Bread with Lime Glaze from Cooking Light. I left out the rum, and it was still yummy. (The recipe suggests substituting apple juice.) Here's how mine turned out:

Yum, I love banana bread. This variation looks great!
This is my favorite banana bread recipe! I almost always use it when making banana bread. So good, you should try it with the rum, it's awesome!
I really liked this recipe. Your mom's still happens to be the best banana bread in the universe, though.
