Spicy baked sweet potatos
I love chips! Tortillas chips with salsa, potato chips and dill pickles, multigrain chips with hummus - you name the chip, and I probably love it. I don't love high calorie, low nutrient snacks. My new favorite snack solves that dilemma.
Preheat the oven to 400. Thinly slice some sweet potatoes, and spread them evenly on a cookie sheet. Spray with cooking spray, then sprinkle with kosher salt, freshly ground pepper, and cayenne pepper, if you like a little kick.
Bake for 30 minutes, or longer, depending on the consistency you want and how hungry you are:) I like mine crispy on the edges and a little chewy inside. The edges start to curl up when they are getting close to done.
