Pig Pancakes


I love pancakes. I love them for breakfast and for dinner. I love them with butter and homemade maple syrup. I love them with applesauce, cinnamon, and pecans. I love them with fresh fruit and whipped cream. I love them with blueberry syrup or strawberry jam. I love them with a side of eggs and bacon. We eat pancakes at least once a week. They are my last-minute, quick, go-to meal.

I found this cute idea on Pinterest and knew immediately that my boys would go crazy over these pancakes. My husband has been telling made-up stories about Harvey the Pig and his sidekick, Snortey, for years. These pigs are hilarious, and they are a big part of our family culture. They have been on the campaign trail recently with slogans such as "Bring real pork to Washington!", "I like corn!" in Iowa, "There's a new ham in New Ham-shire!", and "No more change for America!", an eliminate pennies platform.

My favorite recipe is the Oatmeal Pancake Mix from Mel's Kitchen Cafe. I have slightly adapted her recipe, adding 2 cups of non-fat powdered milk and 1 1/2 cups of egg powder.

INGREDIENTS:
3 1/2 cups oats, ground to powder in the blender or food processor
5 cups whole wheat flour
3 tablespoons sugar
3 tablespoons baking powder
1 tablespoon salt
1 tablespoon baking soda
2 cups non-fat powdered milk
1 1/2 cups powdered egg
1 cup canola oil

Mix all the dry ingredients first, then add in the canola oil and mix well. I store mine in the fridge in a 1-gallon ziploc bag.

When it's cooking time, mix 2 cups of the pancake mix with 1 cup of water, depending on how thick you like your pancakes. Cook and enjoy!

This is too cute! I never thought to do a pig, it's awesome! My mom used to make me Mickey Mouse ones. Thanks for sharing the pancake recipe! Saturdays are my "have time to actually cook breakfast" days. Can't wait to try it! Thanks again for sharing :)
