Homemade blueberry syrup
When I was a kid, we had family breakfast every morning together, usually around 6 am on school days. Most of the time, we had something hot, like waffles, oatmeal, pancakes, cornbread, which my mom would prepare. She always made homemade syrup to go on our pancakes, either maple or fruit syrup. This is a modification of her fruit syrup recipe.
3 cups frozen blueberries (you could use other fruit as well; I've used strawberries and blackberries, too)
1 cup white sugar
1/2 cup brown sugar
2 cups water
dash of salt
1 teaspoon vanilla
Bring to a boil. If you like thick syrup, add a tablespoon or two of cornstarch mixed with 1/3 - 1/2 cup cold water, then wait for syrup to thicken.
Serve hot over pancakes or waffles. So delicious!
