Baked fish with rice and vegetables

Growing up and even now, I have not been much of a fish eater. However, in recent weeks, I have been Living the Life and loving it, and this week's meal plan included baked fish. It was simple, healthy, and quite tasty.


Ingredients (for each person):
1 5-oz white fish filet, fresh or thawed (I used tilapia)
1/3 cup cooked brown rice (the recipe called for sweet brown rice, but I used regular)
2 Tbsp salsa
1 Tbsp fat free sour cream
1/8 avocado
lettuce, cucumber, bell peppers

Instructions:
Preheat your oven to 400 degrees. Put your fish in a pan sprayed with cooking spray. Bake 20 minutes per side. Serve over cooked brown rice, top with salsa, sour cream, and diced avocado, with your favorite green vegetable or a green salad.

I thought it would have been even better with some fresh cilantro, a squeeze of fresh lime, and black pepper.
